You can use bulgur instead of couscous as well. Prepare it according the instructions on the package.
Ingredients: 1 cup of couscous, 1 eggplant, 2 tomatoes, 2 bell peppers, mozzarella, olive oil, 2 shredded garlic clove, cilantro, salt and pepper to taste.
Brew couscous in boiling water. Cut the vegetables and fry it with olive oil until it’s ready. Mix couscous with vegetables in a big bowl, add cilantro, sprinkle with salt, pepper and shredded garlic.
When the salad is ready, put it in a casserole dish. Cut or grate mozzarella, put it on the couscous with vegetables, then put it in a preheated oven for 10 minutes to melt the cheese.
