Native to our bioregion, these tubers are a member of the sunflower family. Raw, they have a sweet, nut-like flavor with crisp texture resembling water chestnut. They are a unique and delicious addition to both raw and cooked dishes. Baked, they ooze with their sugars. They add great umami flavor to soups, stews, and casseroles.
These tubers store carbs in the form of inulin, and sugar as levelose, and are therefore sought out by diabetics.
