NSP Pearl Millet is whole and therefore unhulled. We do not (yet) have the technology to remove the hulls, which in the case of millet, are edible and do not add unwanted fiber. Although, what the intact hull does is increase the cooking time. Whereas hulled millet takes 20 minutes to cook, you should count on unhulled millet requiring one hour cooking time. Millet is a powerhouse, high protein grain with mild nutty flavor.
The millet to water ratio is 1:2. Add salt to the cooking water at a ratio of 1 tsp per 2 cups millet. Bring the water to a boil, add millet and salt, turn the heat down and let simmer for 1 hour until the water is fully absorbed and the millet is tender.
