Due to special circumstances, these beans are difficult to acquire. In some cases the source is new and only tiny amounts are available (such as India). In others, production is the result of a special socio-economic program (such as Peru). These beans are exceptional, and we are particularly proud to share them with you when available. Watch for new arrivals regularly!
These new bars come from Anamalai Tamil Nadu, India
Anamalai–“elephant hills”—is the name of both the farm and the major wildlife preserve near it. Owners Harish and Karthi practice sustainable and organic methods to diversify crops and keep the land healthy. They manage water use with drip irrigation and keep a small herd of cows for weeding and manure compost. The majority of cacao produced in India is grown for large chocolate manufacturers. Chocolibrium is happy to pay a premium to support the efforts of smaller farmers like Harish and Karthi, and we hope you’ll support them too!
The flavor profile of their beans is gorgeous and unusual, with flavors of tart, bright fruits and roasted nuts.
The other bar in this special edition package is from an Association of Organic Producers in Polochi Valley, Guatemala including 126 women as primary cacao producers. All 495 members are small, family farms.
Flavor profile is subtle ripe plum over a nutty, strong chocolate base.
Ingredients of both: Organic cacao beans, organic cane sugar, natural cocoa buttere
